Cake Recipe Overview

Greta Gris Home made cake is based on traditional Ukrainian cake recipe known also as a “honey cake”. Its very easy recipe and at the same time one of the best in taste. So let’s start!

Ukrainian honey cake “Medivnyk” recipe

Cake recipe is for baker’s form 16-18 cm. For baking form 24-26 cm just multiply the ingredients on 2.

Cake ingredients

2 eggs
50g butter or margarine
3 tablespoons of honey or “ljus sirap”
100g sugar
300g of flour
5g of bikarbonat natron
10ml of lemon juice

Cream ingredients

0.5kg of Greek yogurt
125g of sour cream
350ml cream (36%)
50g honey
sugar powder to taste

Preparations

We will need a sieve and gauze/cheesecloth. Place cheesecloth inside the sieve. Sieve place on top of a big bowl. Feel it with the Greek yogurt. Let it stand for at least 4 hours or even better the whole night.

Cake layers

Let’s make cake layers. We will need a pan with a thick bottom. Place ingredients in the pan: pour honey, sugar, and butter. Set it to medium heat. Do non-intensive mixing till mass becomes a single liquid. Then remove the pan from the heat. Continue mixing. The liquid should be cooled down a little. Input eggs one by one into the mix. Take Bkarbonat natron and add lemon juice to it. Chemical reaction should start. Put those into the mix. Then add flour – you got the dough. The consistency of the dough should be similar to a chewing gum.

Be ready to divide the dough into 8-10 parts equal parts. Use the flour to powder your hands and baking paper. Cut and take a one piece of dough. The dough should be sticky. Lightly sprinkle the dough with flour on top. Roll the dough till it feets the desired diameter/size of the baking tray. Easily pierce the dough with a fork. Place it in the oven at a temperature of 180° C for around 5 minutes. Repeat the same steps with all the pieces of dough. (You can double the process speed If you have two baking trays.)
Now its time to give a shape to it. Extract cake layer from the oven and cut it to a favorite shape (circle, triangle, square, etc). Store cut pieces of a bakery for later. Don’t forget to remove the baking paper. I personally do circle shape for all cake layers.

Cake Cream

We take heavy cream and whisk it, the cream should start thickening. It is not necessary to whisk the cream until complete thickening. Now join sour cream, prepared yogurt & honey. Mix and try its taste. If you feel that it is not sweet enough – add a little sugar powder and continue mixing. Repeat the last step till you match own taste of sweetness.

Finish line

Put on a top of each baked layer our cream, stack them. Now it should stand in the refrigerator for 1 hour, better the whole night. Get a cooled cake, and leveling/fix sides and top. After cutting the shapes we should have some bakery pieces left. Smash them to breadcrumb and use as a topping.

Organize the kids to sit in a circle and then play some music. The parcel is passed around with music playing. Then when you stop the music suddenly, the kid holding the parcel unwraps the first layer of the parcel.

Then start the music again and the parcel continues on its journey around the circle of seated children. Repeat the pause-and-play music thingy until the entire wraps of the parcel goes off. The child that unwraps the last layer wins the prize. Ensure you make everyone that participates in this game a winner. Duck Duck Goose

This is a classic activity, but fun nonetheless. Get the children to sit in a circle, but with one of them standing outside the ring. This kid starts walking around the circle pronouncing. ‘duck, duck, duck’ while tapping the other kids seated on the floor lightly on their heads. At random, the kid says ‘goose’ as they tap another kid’s head. The child whose head was tapped and proclaimed a ‘goose’ gets to their feet and chases the other kid outside the circle. If the first kid gets to the spot where the other kid left a short while ago without getting caught, then the other kid becomes the new goose. If, however, the first child gets caught, they have to go for another round again.

Treasure Hunt 

Conceal toys, treats or sweets around the yard and let the kids get in there to find them. Whatever any kid finds, they can keep. You can also make a slight variation of the game by giving each toddler a color that matches the color of the toys they need to find in the yard.

Clothespin Drop

For this game, you will need clothespins, a large-mouth jar, and a chair. Place the jar at the base of the chair. Then get the children to kneel or stand on the chair one after the other, facing backwards. Then they should try to drop clothespins into the large-mouth jar. Every clothespin must be held at chin level before it gets dropped into the jar. Allow each kid to have a minimum of five tries, and for every clothespin that successfully gets into the jar, an extra turn is awarded to the child.

Smell it, Hear it 

You will need several jars, spices, and notions. Get hold of the jars and wrap them with newspaper or any type of paper that is not transparent. The goal is to shield the contents of the jars. Then fill the jars with vanilla, cinnamon, paperclips, and pennies. Then the children should sit in a circle and pass the jars around the cycle. They should shake or smell and then guess the contents of the jars. Allow the children to guess the content of the jars and then reveal it afterwards.

Bonus, Extra Two Games

‘Fishing’ for Loot Bags – In this activity, you will need to wrap small gifts – mini cars, sweets, crayons, etc. – and use a sticky tape to fasten a metal washer to each one of the gifts. Then, create a makeshift ‘fishing line’ using a thin stick and a short piece of string at the end of which is a small magnet. Then make the children to stand on a small chair or stool and ‘fish’ a present!

Hula Hoop Race – This exciting game has to do with a team effort. Get the kids into two separate teams and line them up, each one holding the hands of the next person. Each team will be required to get hold of a hula hoop from one side of the line to the other side. But they must not let go of each other’s hands. 13.  Watercolor Painting – Once your toddler gets the hang of using watercolors, it can be engrossing and become an independent but low mess creative activity for your little one.

14.  Obstacle Course – If your toddler is always bubbling with energy, creating an obstacle course will be right up little one’s alley. You can create an obstacle course using a variety of solid objects like large boxes, couches, chairs, etc. and get your baby to navigate them. The objects used in the obstacle course should not be easy to move out of the way or get run over. Of course, you can add some variety to this activity by adding a few objects – like pillows, etc. – that your kid can climb over.

15.  Cotton Balls – You can allow your baby to play with cotton balls by sorting them in an ice cube tray or any other container. This is a quiet activity that can engross your toddler and the messy part? They get to tear those cotton balls apart just for the fun of it.
