Cake Recipe Overview
Greta Gris Home made cake is based on traditional Ukrainian cake recipe known also as a “honey cake”. Its very easy recipe and at the same time one of the best in taste. So let’s start!
Ukrainian honey cake “Medivnyk” recipe
Cake recipe is for baker’s form 16-18 cm. For baking form 24-26 cm just multiply the ingredients on 2.
50g butter or margarine
3 tablespoons of honey or “ljus sirap”
300g of flour
5g of bikarbonat natron
10ml of lemon juice
0.5kg of Greek yogurt
125g of sour cream
350ml cream (36%)
sugar powder to taste
We will need a sieve and gauze/cheesecloth. Place cheesecloth inside the sieve. Sieve place on top of a big bowl. Feel it with the Greek yogurt. Let it stand for at least 4 hours or even better the whole night.
Let’s make cake layers. We will need a pan with a thick bottom. Place ingredients in the pan: pour honey, sugar, and butter. Set it to medium heat. Do non-intensive mixing till mass becomes a single liquid. Then remove the pan from the heat. Continue mixing. The liquid should be cooled down a little. Input eggs one by one into the mix. Take Bkarbonat natron and add lemon juice to it. Chemical reaction should start. Put those into the mix. Then add flour – you got the dough. The consistency of the dough should be similar to a chewing gum.
Be ready to divide the dough into 8-10 parts equal parts. Use the flour to powder your hands and baking paper. Cut and take a one piece of dough. The dough should be sticky. Lightly sprinkle the dough with flour on top. Roll the dough till it feets the desired diameter/size of the baking tray. Easily pierce the dough with a fork. Place it in the oven at a temperature of 180° C for around 5 minutes. Repeat the same steps with all the pieces of dough. (You can double the process speed If you have two baking trays.)
Now its time to give a shape to it. Extract cake layer from the oven and cut it to a favorite shape (circle, triangle, square, etc). Store cut pieces of a bakery for later. Don’t forget to remove the baking paper. I personally do circle shape for all cake layers.
We take heavy cream and whisk it, the cream should start thickening. It is not necessary to whisk the cream until complete thickening. Now join sour cream, prepared yogurt & honey. Mix and try its taste. If you feel that it is not sweet enough – add a little sugar powder and continue mixing. Repeat the last step till you match own taste of sweetness.
Put on a top of each baked layer our cream, stack them. Now it should stand in the refrigerator for 1 hour, better the whole night. Get a cooled cake, and leveling/fix sides and top. After cutting the shapes we should have some bakery pieces left. Smash them to breadcrumb and use as a topping.
